Texmex Easy Homemade Enchiladas

Enchiladas 2 lb. ground meat 3/ 15oz. cans chili with beans 1/2 onion diced 20 corn tortillas 1/2 tbsp. cumin 1/2 tbsp. garlic 1/2 tbsp.chili powder 1/2 tbsp.Knorr tomate 1/2 tbsp.Knorr pollo 2 cups of shredded cheese or more depends on how cheesy you want the enchiladas 4 to 6 tbsp. oil add more if needed Preheat Oven at 375 degrees. Brown meat, drain off fat add the onion cook until translucent, then spices mix well, add chili with beans, mix well cook for ten minutes, set aside.   s often tortillas in hot oil set aside grab a tortillas place on a baking dish, fill with chili meat mix and some shredded cheese. Roll once all tortillas are filled and rolled smother the top with the rest of the chili meat If any shredded cheese is left sprinkle on top. Fluffy Flavorful Homemade Pancakes

Homemade Pancakes 2 c all-purpose flour 4 tsp.   Baking powder 1/4 tsp. salt 1/4 cup    Sugar 1/4 cup malt powder milk 1 1/4 cups milk or buttermilk or heavy cream 2 egg 2 tsp. vanilla 1 tsp. oil Directions In a large bowl, add the flour, baking powder, salt, malt powder milk, and sugar mix with a Wisk or hand mixer, then add milk, oil, vanilla, and egg mix until smooth. Heat a lightly oiled griddle or frying pan over medium-high heat. Scoop the batter onto the griddle or frying pan, Brown on one side of the pancake, on the top side you will start to see bubbles forming that means pancake is ready to flip over, flip and brown the other side, pull out and butter right away, lightly oil the pan again using a paper towel be careful you don't burn yourself, and repeat. Homemade Caldo De Res (Beef Soup)

Homemade Caldo De Res I use a roaster 2 lbs. of short beef ribs 1 large tomato, diced 3 large. Potatoes cut into 6 to 8 pieces 1 onion, sliced 4 carrots, chopped or if you like carrots like I do I buy the mini carrots in a bag 2 lbs. but that’s me and add them all. 1 of head of cabbage, cut in 8 pieces 2 medium sliced green zucchini 2 medium sliced yellow zucchini 1 medium green bell pepper 3 corn on the cobs cut in 3 or you can use frozen 1 small bag of veggie mix frozen 2 tbsp. garlic 2 tbsp. PopCorn Balls

Popcorn Balls 8 c. of popcorn popped 3tbsp butter 2c of mini marshmallows  4tbsp of jello powder any flavor mine was strawberry I wanted the popcorn balls to be pink.   Have your popcorn popped set aside, in a safe microwave bowl add your butter, marshmallows, and the jello melt for 90 seconds with a rubber spatula mix it if some of the marshmallows are still showing heat for another 10 seconds be careful it's a little hot pour over popped popcorn mix well.     Put on gloves and start forming the balls. Place on a wax paper let sit for about 15 minutes. Eat them or place in a Baggie and give them out for Halloween or at a birthday party as I did. Turkey Potpie

Turkey Potpie  yummy made with my leftover turkey and pie dough.  Sheared Turkey set aside in a pot boil water add salt garlic pepper diced onions, cubed potatoes, boil until soft add a bag of frozen veggie mix like peas,carrots,corn, and green beans drain and add a can of cream of mushrooms, water and 3 packs of chicken or turkey gravy Pouches heat until thicken mix all together pour into a baked pie shell top with another raw pie shell bake until golden brown let set 10 min.
