Mustard Potato salad

Mustard Potato salad 2 1/2 lbs. potatoes, peeled and cubed 4 ribs celery, sliced and chopped 1/2 medium red, or any onion you like chopped 1 medium jar pimento, drained 5 tablespoons dill pickle relish 5 boiled eggs shell free sliced and diced into small cubes 3/4 cup mayonnaise 1/3 cup yellow mustard Salt to taste Directions Boil potatoes and eggs in water about 12 to15 minutes, or until just tender pull eggs out after 8 minutes, Drain the potatoes and spread out onto a cookie sheet to cool quickly in the freezer, about 10 minutes. While potatoes and eggs are cooling in a bowl, combine celery, onion, pimento, relish, mayonnaise and mustard mix well, combine cooled potatoes and eggs with other ingredients don’t over Stir, the potatoes might break into smaller pieces if over stirred salt to your liking. Carne Asada Quesadilla

Carne Asada Quesadilla 2 lbs. Milanese Meat pounds or boneless beef top sirloin, cut into thin bite-size slices 1 teaspoon ground cumin 1 teaspoon ground Garlic 1-2 tbsp. Uncle Chris’s steak spice ½ tbsp.. Lemon Pepper 12 Tortillas 2 cups Mix Mexican Cheese 2 Lemons cut into wedges 1 white onion, chopped 1 bushel of Cilantro chopped 1 Avocado smashed 1tbsp. oil Salsa (optional) Directions: Place sliced meat into a shallow bowl, and seasons, toss until evenly coated. In a large pan over high heat, heat oil, when oil is very hot toss in meat keep stirring until browned, once the meat is cooked add onion and sauté until onion is a translucent turn off add cilantro mix and set aside.   Heat tortillas only on one side just a little toasted, Do that to all the tortillas. Banana Oreo Pudding Pops

Banana Oreo Pudding Pops 12/5 oz. Dixie All-Purpose mini cups 2 small pkg. 1 French Vanilla and 1 Banana pudding instant 1 cup whipped-cream I used my own homemade 25 Oreo cookies, Crush ½ of the cookies into fine crumbs, cut the rest of the cookies into small pieces. Directions: Follow instructions to the pudding box, Mix milk and pudding till it starts to thicken up. Stir in Whip-cream Place in the freezer. While pudding is in the freezer Cut ½ of the cookies into small pieces, fold into the pudding mixture place back in the freezer. Now the other 1/2 of the cookies Crush the cookies into fine crumbs, place half of the cookies crumbs into the bottoms of mini cups and fill to the top with pudding add the remain crumbs to the tops of the cups and insert a Popsicle stick. Meringues Nest with Ice-cream & Roasted Berries Roasted Berries 1 pint fresh strawberries 2 half-pints fresh raspberries 2 half-pints fresh blackberries 1/4 cup sugar 1 tsp. Vanilla Preheat the oven to 450 Direction Place the strawberries, raspberries, and blackberries on a baking pan with sides a little high if you have it as it will rise as it is roasting, toss with the sugar and vanilla. Roast in the oven for 20 minutes. Cool to room temperature before serving. Mexican Rice

Mexican Rice 2 c. rice 1 TBSP oil 4 oz. tomato sauce 4 c water +2 more after water has reduced ½ TBSP. Knorr Tomate Powder ½ TBSP. Knorr Pollo Powder ½ TBSP. Cumin Powder ½ TBSP Garlic Powder ¼ of a large Onion cut in half ¼ of a large Bell pepper cut in half 1/4 cilantro Heat oil in a large saucepan over medium heat add rice, stirring constantly, until golden brown. Add water, spices, Stir in onions, Bell pepper,   tomato sauce, and water; bring to a boil. Reduce heat to low, cook about 18-20 minutes after browning once the water has reduced take off of the heat and cover and let the steam finish cooking it about 10 minutes.   Fluff with a fork. Carne Guisada

Carne Guisada 1 tbsp. oil 2 ½ lbs. lean stew meat 5 single sticks of celery sliced and chopped 1 of a medium onion sliced and diced 1 bell pepper sliced and chopped 4 c. water add more if needed 1 tbsp. chili powder 1 TBSP. Knorr Pollo 1 Tbsp. Black pepper 1 TBSP. Cumin Powder 1 TBSP Garlic Powder    In a Large pot heat the oil over medium-high heat, a dd the meat and brown quickly.  Reduce the heat to medium add onion, celery, bell pepper, cook until the onion is translucent, add cumin, garlic, Knorr Pollo, black pepper, chili powder, mix well, add water and let it cook until meat is tender.   Enjoy it in a bowl or with a tortilla, some like it with cheese, others like it with lettuce and tomato your choice mine is with a flour tortilla and salsa, rice and beans on the side or some pico de gallo.. Pico De Gallo

Pico De Gallo 5 large roma tomatoes diced 1 medium onion, finely chopped 1 bushel of cilantro, chopped 6 diced Chile Serrano or fresh jalapenos, add more if you want it spicier or less it’s up to you 2 fresh limes or lemons (juice only) squeezed on top of pico de gallo  Salt to taste Chop and dice all ingredients place in a bowl mix add lemon juice salt to taste let sit for about 30 minutes in the refrigerator. Homemade Beans

Homemade Beans 2 lbs.beans 10 c water + 2 more c. 2 TBSP. Cumin 2 TBSP Garlic 2 TBSP. Knorr Tomate Powder 2 TBSP. Knorr Pollo Powder ½ can of tomato sauce 4oz. Rinse the beans really good then   Place the pinto beans in a large pot add the water and let them soak overnight they will expand, rinse one more time and discard the water, now place the clean beans in your pot with water add Knorr Tomate, Knorr Pollo, garlic, cumin, and tomato sauce. Bring to a boil, reduce heat to medium-high, and continue cooking stirring occasionally, until beans are tender add water as needed to keep the beans moist I used a total of 12 cups of water but I like my beans juicy.   These are plain homemade beans to give it more flavor add bacon strips from the beginning of the cooking, I've even added sausage, chicharrones/pork skins the plain ones,    Want to make them Charro Beans add Pico de Gallo to it at the end when they are done cooking or my favorite Borracho Beans in a
