Healthy Chicken Zoodle Soup

Healthy Chicken Zoodle Soup 2 tablespoons oil 1 pound boneless, skinless chicken breasts, shredded or cut into bite size cubes. I used a rotisserie chicken and shredded 2 cups of frozen mix vegetables 3 tablespoons garlic powder 3 tablespoon cumin 1 small onion sliced 1/4 of bell pepper of each color, green, red, yellow, orange. (optional you can use one solid color) but I like to use the rainbow. 1 small pack of baby carrots or sliced 3 stalks celery sliced 1 bushel of cilantro 4 cups chicken broth store bought or homemade 2 or 3 zucchini spiralized Heat oil in a large pot over medium heat. To the pot add all the vegetables, except zucchini noodles. Cook until onions are caramelized. Once the onions are cooked add Zoodles, cook for 3 minutes. Then add all the spices, mix and add chicken and chicken broth, mix taste and add salt and pepper to taste, bring to a boil for 5 minutes, after the 5 minutes lower heat and cook until Zoodl

Deconstructed Omelette

Deconstructed Omelette 5 eggs 3 tbsp. Milk 1/4 cup chopped ham 3 tbsp. Chopped green bell peppers 3 tbsp. chopped red bell peppers 3 tbsp. chopped yellow bell peppers 3 tbsp. chopped orange bell peppers 3 tbsp. chopped onions 3 tbsp. chopped sliced mushrooms 3 tbsp. chopped green onions 3 tbsp. chopped cilantro 1/2 of a roma tomato 1/2 cup of shredded cheese Salt & pepper to taste In a bowl whisk eggs, and milk set aside. On medium heat put a pan and add all of the above ingredients, not the eggs and milk. Cook for two minutes. Now add the whisk eggs. Scramble the eggs and cook the mixture together until the eggs are cooked thoroughly until eggs are no longer runny. On a plate sprinkle a little of the cheese, then flip the egg mixture you just cook on top of the cheese, then sprinkle with remaining cheese, cover with lid for a minute or so, that way the cheese melts onto the Deconstructed Omelette. Serve with an extra dash of pepper

Ground Turkey Chili

2-pound ground turkey 1 onion, diced 1  bell pepper diced 1/24oz. can crushed tomatoes 32oz. Water 2 tbsp. chili powder 1 tbsp. knorr tomate 2 tbsp. Black pepper 2 tbsp. garlic powder 2 tbsp. cumin powder 1/2 pack of chili mix 1 lb. Pinto Beans cooked or 3/15oz. Cans pinto beans rinsed My secret ingredient!!! In a large pan over medium heat, Brown your ground turkey, chop onions, and bell pepper, Sauté until onions are translucent, add all the dry ingredients mix all together. Now add all of the meat and veggies to the beans let it cook for about 45 minutes on a low to medium heat. Turn off Now at this point, I add my secret ingredient... 4 ounces of Velveeta Cheese cut in chunks throw it in the pot let it rest for another 20 minutes. Mix a few times making sure all the cheese melts into the chili. Optional toppings Cilantro, onion, sour cream, avocado, shredded cheese, flour tortillas, crackers, or cornbread. Sausage a la Mexicana

Sausage a la Mexicana 1 link of your favorite sausage, about 12 to 16 ounce  2 TBSP.  oil 1 small onion 1medium tomatoes, rinse and diced 1 jalapeño, rinse and diced 1/4 cup cilantro, chopped Salt and pepper to taste In a pot add oil, let it heat up, then add sausage, since my sausage is fully cooked I can cook it just for a bit, just to get some color to it, now add onions,  cook for a minute then add cilantro and jalapeños cook until tender and onion is translucent, then add tomato and salt and pepper to taste. Serve on a corn or flour tortilla, or as a side for your Sunnyside eggs. Simple Banana Bread Muffins

Banana Bread Muffins Just a little tip to save you time when you want something delicious for breakfast or with your coffee. Make the banana bread as instructed below, once its baked cool completely, then once it has cooled wrap each loaf 2 or 3 times with plastic wrap then pack them in a freezer Ziploc. When you're ready to use you can defrost in a microwave or leave on the counter until it defrosts completely and enjoy 3 c. Flour 1 tsp. Ground cinnamon 2 tsp. Baking soda 2 tsp. Baking powder 2 tsp. Cinnamon 1 1/2 c. Sugar 2 TBSP. Vanilla or banana extract 2/3 c. butter melted 2 eggs 6 medium riped Bananas Pecans or Walnuts Optional Preheat oven to 325* – 350* depends on your oven. Use cupcake liners or spray your bread pans with baking spray. Makes 4 medium loaves with 6 small round cupcake style muffins, 8 / 4inch round diameter baking cups each one takes one cup of batter, 24 muffins, or 2 very large loaves.  In a large mixer blend
