Healthy Chicken Zoodle Soup
2 tablespoons oil
1 pound boneless, skinless chicken breasts, shredded or cut into bite size cubes. I used a rotisserie chicken and shredded
2 cups of frozen mix vegetables
3 tablespoons garlic powder
3 tablespoon cumin
1 small onion sliced
1/4 of bell pepper of each color, green, red, yellow, orange. (optional you can use one solid color) but I like to use the rainbow.
1 small pack of baby carrots or sliced
3 stalks celery sliced
1 bushel of cilantro
4 cups chicken broth store bought or homemade
2 or 3 zucchini spiralized
Heat oil in a large pot over medium heat.
To the pot add all the vegetables, except zucchini noodles.
Cook until onions are caramelized.
Once the onions are cooked add Zoodles, cook for 3 minutes.
Then add all the spices, mix and add chicken and chicken broth, mix taste and add salt and pepper to taste, bring to a boil for 5 minutes, after the 5 minutes lower heat and cook until Zoodles (zucchini) are tender.
