Polvorones (Mexican Cinnamon Cookies)

Polvorones (Mexican Cinnamon Cookies) 2 cups flour 1/2 cup sugar 1 tsp. baking powder pinch of salt 1/2 cup lard (room temp) 1/2 cup butter (room Temp) 1/2 tsp. vanilla extract 1/2 tsp. almond extract Let's get started In a dry bowl add flour, salt, and baking powder, set aside. Line 2 cookie sheets with parchment paper set aside. Get you standup mixer, to your mixer bowl add butter and lard cream until they are well combined, now add the sugar and extracts, mix well, will look a little broken that's fine. Now add flour mixture and mix for 2 minutes, pour dough mixture onto a dry counter, using your hands work and gather the dough to form a ball, cut in half and refrigerate for at least an hour. Only pull the dough you are going to use leave the rest in the refrigerator. Biscuits & Sausage Gravy Gather your ingredients 1 Pork Sausage Roll 1/4 c flour 1/8 c butter 2 1/2 c milk 1 tsp. salt  1 tsp. pepper biscuits fresh or store bought Let's get started Bake biscuits While the biscuits are baking in a medium pot on medium-high heat cook sausage and crumble with a spatula into small pieces. Once the sausage is cooked through, sprinkle the flour, salt, and black pepper until sausage has a nice coating.  Slowly add your milk, until you've reached your desired consistency.  If you prefer soupier, add more milk. If you like the sauce to be thicker, add less milk.  If you find you have added too much milk, add flour to thicken it up or make a slur by add a little bit of cornstarch and water mix well then add it to the sausage gravy.  Add more salt and pepper to taste if needed. Calabaza Con Pollo ( Zucchini & Chicken)

Calabaza Con Pollo ( Zucchini & Chicken)  Gather your Ingredients 2 lbs chicken breast or any favorite part of the chicken you like, boil & shred or cut in bite-size chunks 3 green zucchini, sliced 1 tomato, diced 1 onion sliced 2 tbsp. cooking oil 1 tbsp. knorr pollo 2 tsp. black pepper 1 tbsp. garlic powder 1 tbsp. cumin 2 c. frozen corn or one (15 ounces) can whole kernel corn 1(8 ounces) can tomato sauce Let's get started  In a pot add chicken and fill with water just enough to cover the chicken, boil until cooked through with no pink, set aside once cool enough to handle shred the chicken. Wash all the vegetables Cut the onion, zucchini into round slices and set aside, if the slices are to big cut slices in half. In a large pot add oil,  onion, zucchini saute until onion is translucent, add shredded or bite-size chicken and cook for about 5 more minutes.
