Calabaza Con Pollo ( Zucchini & Chicken)
Gather your Ingredients
2 lbs chicken breast or any favorite part of the chicken you like, boil & shred or cut in bite-size chunks
3 green zucchini, sliced
1 tomato, diced
1 onion sliced
2 tbsp. cooking oil
1 tbsp. knorr pollo
2 tsp. black pepper
1 tbsp. garlic powder
1 tbsp. cumin
2 c. frozen corn or one (15 ounces) can whole kernel corn
1(8 ounces) can tomato sauce
Let's get started
In a pot add chicken and fill with water just enough to cover the chicken, boil until cooked through with no pink, set aside once cool enough to handle shred the chicken.
Wash all the vegetables
Cut the onion, zucchini into round slices and set aside, if the slices are to big cut slices in half.
In a large pot add oil, onion, zucchini saute until onion is translucent, add shredded or bite-size chicken and cook for about 5 more minutes.
Now that the veggies are sauteed with the chicken add the rest of the ingredients, mix all the ingredients well, cover and let simmer on medium heat for about 10 minutes or until the zucchini is tender.
Serve warm corn or flour tortillas and slices of avocado, of course optional.
