Homemade Flour Tortillas

Flour Tortillas 3 cups flour, plus extra to form tortillas. 2 teaspoon salt 3 teaspoon baking powder 1/3 Cup shortening or oil 1 cup hot water more is needed Mix the flour, salt and baking powder in a large bowl mix well, add the shortening/oil mix until crumble, and hot water (don't burn yourself) mix well until dough forms a ball. Place the dough on a lightly floured surface and knead for 3 to 5 minutes or until dough is smooth, add a little more flour if it is too sticky. Let rest for 15 to 20 minutes then divide the dough until you have about 12 to 16 pieces roughly the same size. Shape the dough into small thick Frisbee like pancake shape. Heat skillet or a large pan over medium-high heat.  Working on one at a time, roll out each dough piece on a lightly floured surface.   Try to get them nice and thin, with each roll out rotate the dough until you have it rolled out.  Place it onto the skillet or hot pan and cook for 1 minute o

Papas Ranchera

4 medium potatoes, rinse and diced ¼ cup oil 1 small onion 1medium tomatoes, rinse and diced 1 jalapeƱo, rinse and diced 1/4 cup cilantro, chopped Salt to taste In a pot add oil, let it heat up, then add potatoes, cook and let it toast a bit while it's toasting cover with lid to let it steam and softened, do this until it's all toasty lite brown, and cooked all the way through, now add onions, cilantro and jalapeƱos cook until translucent, then add tomato and salt.  Serve on a corn or flour tortilla. HOMEMADE WHITE BREAD

HOMEMADE WHITE BREAD  1 cup. + 4 tbsp. warm water  1/4 cup sugar 1 egg 1 1/2 tsp salt 3 3/4 cups flour 2 1/2 tsp yeast Poppy seeds or sesame seeds 1 egg + 1 T milk for egg wash  Get your bread machine out, connected and add ingredients in order listed above, whisk all of the wet ingredients make sure to temper the eggs, then add all dry ingredients except yeast and flour, make sure you mix well, once mixed add flour, then make a little indentation and add yeast. Grease your loaf pan with baking spray and set aside.  When dough cycle is completed, dump the dough on a dry work surface. Separate dough into 3 pieces and roll into a 12" ropes then braid together. Place into prepared loaf pan.  NOw my oven has a proof setting so my dough was put in the oven to rise, so I sprayed my dough with the non-stick baking spray too, no need to cover if you are setting it in the oven to proof. Tomatillo Salsa

Tomatillo Salsa 5 tomatillos, toasted on your griddle 2 hatch Chile's, toasted on your griddle 5 fresh jalapenos, toasted on your griddle 2 Roma tomatoes 1/2 bunch cilantro 1small onion, cut in four 1tsp. garlic powder 1 tsp. Cumin powder Salt to taste In a pot add the toasted veggies above add a small amount of water about a cup, and the rest of the ingredients.  Boil for 15 minutes. Then blend to the consistency you like, and that's it, enjoy.
