Puerco En Salsa De Chile Verde (pork in green chili sauce)

3 lbs. pork meat cut into bite size 2 single sticks of celery sliced and chopped 1/2 onion sliced and diced 1 bell pepper sliced and chopped 1 small can of green chile (pork Broth) or water 2 TBSP. Knorr Tomate 1 TBSP. Cumin Powder 1 TBSP Garlic Powder 1 TBSP tomato paste 4 oz. tomato sauce  In a Large pot add a drizzle of oil, and pork-chops cook until no longer pink, once this is done add onion, celery, and bell peppers cook until the onion is translucent, add water or broth, enough to cover above the chops, add all the spices and the rest of the ingredients, mix well and boil until pork-chops are tender. Serve this meat inside a gordita or a flour tortilla add salsa, rice, fideo, and beans on the side. All this is optional. Pumpkin Cinnamon Rolls

Good evening My Foodie Family. Look what just came out of the oven!!! Ohhh, Yessss Baby!!! It's that good I'm going back for seconds!!! I've been playing around and I finally combined my favorites together... Yes, pumpkin pie and cinnamon rolls. Pumpkin Cinnamon Rolls Dough 3 1/4 cups all-purpose flour, or as needed 1/4 cup granulated sugar 1 tablespoons pumpkin pie spice 2 1/4 teaspoons rapid rise = 1 pk. 1/2 cup butter, melted (1 stick) 1/2 cup buttermilk 1/2 cup pure pumpkin puree 1 large egg, lightly whisked Pinch of salt In a bowl mix pumpkin puree, and egg, and pour it into the bread maker, now melt butter for 10 seconds and add spices, salt, mix well and add to bread maker, now add to the bread maker, milk, sugar, flour, and yeast. One Dish Meatloaf

Meatloaf 3 pounds lean ground beef 1/2 small onion, diced small 1/2 bell pepper, diced small 1 egg 1 cup mushrooms, diced very small 1 tsp. ground Black pepper 1 TBSP. Worcestershire sauce 1 tsp. Onion powder 1 TBSP. Dijon mustard 1 pk. Pioneer meatloaf mix 1/2 cup shredded cheese Glaze Topping: 1 cup ketchup 1/2 tbsp. Dijon mustard 1/2 cup BBQ sauce 1 TBSP. Worcestershire sauce Instructions Preheat oven to 375° Spray a 9x5" loaf pan or a round glass baking dish with non-stick cooking spray. In the same dish you are baking the loaf mix together ground beef, onion, egg, bell pepper,  Worcestershire sauce, Pioneer meatloaf mix, Dijon mustard, black pepper, cheese, and onion powder, mix until well combined. Pat down and shape. Bake for 30 minutes  In a small bowl, combine the ketchup, mustard, BBQ sauce, and Worcestershire, spread on top of meatloaf and place in oven for another 15-3

Easy Peasy Sugar Free Coconut Cream Pie

Easy Peasy Sugar-Free Coconut Cream Pie 2 baked 9-inch pie crust baked and cooled 5 package (large size) sugar-free instant vanilla pudding mix 3 1/2 cups almond milk #30 must be #30 there's no sugar in the milk 32 oz. Heavy whipping cream 1/2 cup Splenda 1 pouch of Knox gelatin unflavored 4 cups flaked coconut sugar-free unsweetened toasted and divided 2 tsp. Coconut extract Pinch salt In a cookie sheet add coconut flakes and toast in the oven or stove top. If in oven let it brown to a golden brown pull out mix and toast again, pull out and set aside. In a small microwavable bowl add the Knox and 3 tbsp. water mix and set aside. It's going to gel and that's what you want to happen. In a mixing bowl, beat pudding, coconut extract and milk on low speed for 2 minutes or until it thickens. Needs to be very thick. In another bowl beat whipping cream, a pinch of salt and Splenda till it doubles in size and it resembles whipped cream,

Cheesy Salsa Ranchera

Cheesy Salsa Ranchera 1/15oz red gold mild tex mex petite diced tomatoes & Chile's 1 medium onion sliced 3 oz. Velveeta Cheese 2 to 4 tbsp. Homemade salsa depending how spicy you want it add more or less 1 tbsp. oil 1 tsp. Garlic salt 1 tsp. Onion powder 1/2 cup milk Heat the oil in a skillet, add the onion and fry until soft and translucent once this step is done you add your can of tomatoes and green chile boil until you see the juices reduce a bit then add the rest of the ingredients, keep on mixing until the cheese melts, lower heat and simmer for 10 minutes stirring occasionally. If to watery add a bit more cheese and continue to simmer, the longer it simmers the thicker the sauce. Now that the sauce is cooked set aside. Fry up some sausage once cooked add as much Cheesey salsa ranchera you want, in another pan add Cheesey salsa ranchera and some chicharrones (pork skins) mix add more or less depending how sof

Best chicken enchiladas

1 small can of hatch chile 30 oz. can of cream of chicken 4 cups cooked shredded chicken I used chicken thighs 1 medium onion diced 1/4 of each bell peppers...green, red, yellow, & orange 2 tsp. Of each spice... Ground Cumin, garlic powder, knorr pollo Chicken broth from where you boiled the chicken 2 cups shredded cheese (I used Monterey cheese) 20 corn tortillas soften in oil 6 oz. Velveeta Cheese In a large pot over medium heat add about 2 tbsp. oil and let it heat up a bit then add chicken, onions, and bell peppers, cook until onion is translucent stir often do not leave unattended. Once onion is cooked add the dry spices mix and cook for 2 minutes then pour 1/2 cup of the chicken broth mixture and cook until all of the broth has reduced and evaporated, set aside. In a pan add cream of chicken, Velveeta Cheese, and 1/2 cup of chicken broth, you can add more cheese,  it just depends on how cheesy you want it, I like the mixture to be creamy an

Puerco con Calabasa

2 cups frozen or 2/15oz. Can corn using the corn juice too when adding corn 2 Anaheim chiles roasted         2 jalapeno peppers roasted      1 green bell pepper roasted 1 1/2 tbsp. garlic powder 1 tbsp. Cumin 1 whole medium tomato  roasted 1/4 cup tomato sauce       2 1/2 pork meat cut to bite size                                   1 tbsp. Knorr de tomate once you add it, mix well taste, if needed add more 1/2 diced onion                 2 tablespoons flour 1 1/2 cups Salsa                                    1 1/2 c. water Oil for searing meat about 2 tbsp... ____________________________ for the Salsa Roast your chiles once roasted place peppers in a blender, pulse the chiles peppers, with 1 tps. salt, 1 tsp. garlic, tomato, and tomato sauce and blend. ____________________________ Puerco con Calabasa Heat oil in a large pot on high once the pot is hot add pork and sear for 3 minutes then add onion cook until translucent, now add knorr, garlic

Homemade Beef Stew

Homemade Beef Stew 1 pound beef stewing meat, trimmed cut into bite size vegetable oil 6 cups water 2 to 4 bay leaves 2 large or 4 small 1 medium onion, diced 1 small bag frozen carrots round 2 large potatoes, peeled and cut into bite-size cubed 2 teaspoon Knorr tomate 1 teaspoon black pepper 1 pack of brown gravy Heat oil in a large pot on high, add the beef a few pieces at a time, cook until beef is browned on all sides, about 10 minutes, then add diced onions cook until onion caramelized,  scraping the pan with a spatula to loosen any browned bits, now at this time add 2 cups of water and the rest of the ingredients except the gravy pack, carrots, and potato... mix every few minutes cooked it on high to speed up the cooking. Add water as needed. Cover and cook, until the beef, is tender, about 1 hour. Mix every few minutes. in a cup add about a 1/4 cup of the water and mix in the gravy packet, mix well and set aside. Homemade Chili

Homemade Chili 2-pound ground beef 1 onion, diced 1  of bell pepper diced 2 small cans of tomato paste 2 oz. Tomato sauce 1/24oz. can crushed tomatoes 1/32oz. Chicken broth 3 tbsp. chili powder 1 tbsp. knorr tomate 2 tbsp. Black pepper 2 tbsp. garlic powder 2 tbsp. cumin powder 1 lb. Pinto Beans cooked or 3/15oz. Cans pinto beans rinsed My secret ingredient!!! In a large pan over medium heat, Brown your ground beef until well-done drain all fat and then add your chop onions, bell pepper, Sauté until onions are translucent add all the dry ingredients mix all together. Now add all of the meat and veggies to the beans let it cook for about 2 hours on a low to medium heat. Turn off Now at this point, I add my secret ingredient... 4 ounces of Velveeta Cheese cut in chunks throw it in the pot let it rest for another 20 minutes. Mix a few times making sure all the cheese melts into the chili. Optional toppings Cilantro, onion, sour cream, avocado, shredded chees

Menudo

Menudo 5 pounds of cleaned and rinse, tripe cut into small bite size pieces 3 tbsp. Menudo mix powder 3 bay leaves 6 pigs feet cut in half 4/30oz. Cans of yellow or white hominy, drain and rinse.  6 large garlic cloves 1 large onion cut in 4 4 tbsp dry Mexican oregano Salt 🧂 to taste  For the sauce: 1 chile ancho cleaned, seeded 3 guajillo peppers cleaned, seeded, open flat, and deveined 3 Chile Japones more or less depending on how spicy you want it... 2 whole garlics Let's get started  Cut menudo/tripe to bite size rinse take off as much fat as you can. In a large pot boil the tripe for 30 minutes drain rinse and throw out the water. Put pot back on the stove add fresh water to the pot also adding the pig's feet into the pot, and the rinsed menudo/tripe 6 garlic cloves and the onion, and bay leaves, cook for about 15 minutes at high heat without covering. During this time, skim off the foam that forms if any,   cook for about 2 – 3
