Chocolate Covered Strawberries

Chocolate Covered Strawberries 8 ounces chocolate coating, chopped or broken up in pieces 1lb. strawberries chill in the freezer for 3 minutes Directions Step 1 Place chocolate in a heatproof glass bowl set over (not in) a pot of gently simmering water. Stir just until melted with 1 TBSP. oil or you can melt it in the microwave 30-second increments stir and keep on warming it up until smooth creamy and melted. Step 2 Line a baking sheet with waxed paper. Dip strawberries, one piece at a time, in chocolate, spooning on additional chocolate to cover if needed place on the wax paper then Refrigerate until chocolate is firm, about 1 to 3 minutes in the refrigerator. Beef Nachos

Beef Nachos  (15oz.) can refried beans 2 lb. ground beef (the amount is up to you) 1 teaspoon ground cumin 1 teaspoon ground Garlic 1 teaspoon Knorr Tomate Powder 1 teaspoon Knorr Pollo Powder ¼ c. tomato sauce ½ c. water   1 c. (4 oz.) shredded cheddar cheese 1 ½   c. lettuce, shredded   1 medium tomato, diced   ½ c. onion, chopped 1 bag of plain corn tortilla chips Sliced Jalapenos (optional) ¼ c. cilantro (optional)   ¼ c sour cream (optional) ¼ c guacamole or ½ sliced avocado (optional) 1 c. salsa or pico de gallo (optional) Directions: Brown the ground beef and ¼ c of onions sautéed together, then drain add ¼ cup of water add water as needed at the end the meat needs to be moist but not dripping of juices, add tomato sauce, spices and simmer for about 5 minutes. Homemade Creamy Cheesecake

Creamy Cheesecake CRUST   2 c.   Finely ground graham crackers (about 30 squares) 1/2 tsp.   Ground cinnamon 1/2 c.   Butter, melted (1 stick) . FILLING   4- (8) oz. Blocks cream cheese, room temperature 1 c. Sugar 4 Eggs room temperature 1 1/2 tsp.   Vanilla extract 1 c. Carrot Cake 4 eggs 1 1/4 cups vegetable oil 2 cups white sugar 2 teaspoons vanilla extract 2 cups all-purpose flour 2 teaspoons baking soda 2 teaspoons baking powder 1/2 teaspoon salt 2 teaspoons ground cinnamon 3 cups grated carrots 1 cup coconut grated from a bag 1 cup chopped pecans + 1 cup for garnish (optional) 1/2 cup butter, softened 8 ounces cream cheese, softened 4 cups confectioners' sugar 1 teaspoon vanilla extract Directions     Preheat oven to 350* Spray two 10 inches round baking pans with a nonstick baking spray. Ceviche ½ lb. boiled jumbo shrimp cooled 1/2 cup of freshly squeezed lemon juice 1/2 onion, finely diced 1 cup of chopped fresh tomatoes 1 Serrano chili, finely diced 2 teaspoons of salt ¼ cup cilantro loosely placed in the cup do not press it down 1 Avocado cubed In a non-reactive dish, I use a Pyrex dish; place the cooled boiled shrimp, onion, tomatoes, chili, salt, and cilantro stir until well mixed then add Avocado fold in slowly. Cover with lemon juice. Let sit covered in the refrigerator for an hour, then stir, making sure more of the shrimp gets exposed to the lemon juices, Let sit for several hours, giving time for the flavors to blend. Baked Croissant Taco Ring Ingredients: 2 lb. ground beef 1 teaspoon ground cumin 1 teaspoon ground Garlic 1 teaspoon Knorr Tomate Powder 1 teaspoon Knorr Pollo Powder ¼ c. tomato sauce ½ c. water 1 c. (4 oz.) shredded cheddar cheese 2 8-oz packages refrigerated crescent rolls 1 ½   c. lettuce, shredded 1 medium tomato, diced ½ c. onion, chopped ½ c. sliced black ripe olives ¼ c. cilantro ¼ c sour cream ¼ c guacamole or ½ sliced avocado 1 c. salsa or pico de gallo (optional) Directions: –Preheat oven to 325°. Brown the ground beef and ¼ c of onions sauté together, then drain add ¼ cup of water add water as needed at the end the meat needs to be moist but not dripping of juices, add tomato sauce, spices and simmer for about 5 minutes. –Unroll the crescent dough; separate into triangles. Chicken Mo le Ingredients 3 large chicken breast pieces, no skin, boiled and shredded, reserved chicken broth use as needed 2 ounces semi-sweet chocolate, chopped depends on which one you buy some come in individually wraps squares I use one of those squares 2 tablespoons peanut butter 1 (8.25-ounce) jar DONA MARIA mole ½ TBSP. Knorr Tomate Powder ½ TBSP. Knorr Pollo Powder Add a little bit of salt to your liking I don’t use salt since my spices have salt Directions B oil chicken once boiled pull out the chicken let it cool down a bit then shredded it up or cut into cube sizes. In a medium-size pot place all of DONA MARIA mole with 1 cup of the chicken broth, chocolate, peanut butter, and spices, mix well and keep on adding the chicken broth until you like the thickness of the sauce, once the sauce is to where you like it then add your chicken.
