HOMEMADE WHITE BREAD






HOMEMADE WHITE BREAD 

1 cup. + 4 tbsp. warm water 
1/4 cup sugar
1 egg
1 1/2 tsp salt
3 3/4 cups flour
2 1/2 tsp yeast
Poppy seeds or sesame seeds
1 egg + 1 T milk for egg wash 

Get your bread machine out, connected and add ingredients in order listed above, whisk all of the wet ingredients make sure to temper the eggs, then add all dry ingredients except yeast and flour, make sure you mix well, once mixed add flour, then make a little indentation and add yeast.

Grease your loaf pan with baking spray and set aside.

 When dough cycle is completed, dump the dough on a dry work surface. Separate dough into 3 pieces and roll into a 12" ropes then braid together. Place into prepared loaf pan.

 NOw my oven has a proof setting so my dough was put in the oven to rise, so I sprayed my dough with the non-stick baking spray too, no need to cover if you are setting it in the oven to proof. But if you're not then still spray it with non-stick spray and Cover with a tea towel and set in a warm place until doubled in size, about 45 minutes to an hour if placed out of the oven, but took my dough 30 minutes in the oven to proof. 

Once the dough has doubled brush top of risen dough with the milk and egg wash and sprinkle on poppy seeds or sesame seeds. 

Bake at 350F for 25 - 35 minutes, or until a beautiful golden browned.

 Remove bread loaf from oven and spoon over the top of bread with melted butter let it sit and rest for 5 minutes then invert bread onto a wire rack or you can leave it in the pan.

Let the bread rest for 15 minutes before cutting, when cutting any bread using a serrated knife.


FYI

If you don't have a bread machine, don't worry. 

In the warm water, add your sugar and yeast, and give a quick stir. Let sit for 5 minutes until the yeast foams, Dump into a large bowl and whisk in egg and salt. Dump in flour, stirring until you can't anymore, then dump onto a work surface and knead until smooth, about 5 to 8 minutes using as little extra flour as possible. Same directions apply as the bread machine after it comes out.

Polvorones (Mexican Cinnamon Cookies)

Polvorones (Mexican Cinnamon Cookies) 2 cups flour 1/2 cup sugar 1 tsp. baking powder pinch of salt 1/2 cup lard (room temp) 1/2 cup butter (room Temp) 1/2 tsp. vanilla extract 1/2 tsp. almond extract Let's get started In a dry bowl add flour, salt, and baking powder, set aside. Line 2 cookie sheets with parchment paper set aside. Get you standup mixer, to your mixer bowl add butter and lard cream until they are well combined, now add the sugar and extracts, mix well, will look a little broken that's fine. Now add flour mixture and mix for 2 minutes, pour dough mixture onto a dry counter, using your hands work and gather the dough to form a ball, cut in half and refrigerate for at least an hour. Only pull the dough you are going to use leave the rest in the refrigerator. 4 medium potatoes, rinse and diced ¼ cup oil 1 small onion 1medium tomatoes, rinse and diced 1 jalapeño, rinse and diced 1/4 cup cilantro, chopped Salt to taste In a pot add oil, let it heat up, then add potatoes, cook and let it toast a bit while it's toasting cover with lid to let it steam and softened, do this until it's all toasty lite brown, and cooked all the way through, now add onions, cilantro and jalapeños cook until translucent, then add tomato and salt.  Serve on a corn or flour tortilla.
