Sausage a la Mexicana
1 link of your favorite sausage, about 12 to 16 ounce
2 TBSP. oil
1 small onion
1medium tomatoes, rinse and diced
1 jalapeño, rinse and diced
1/4 cup cilantro, chopped
Salt and pepper to taste
In a pot add oil, let it heat up, then add sausage, since my sausage is fully cooked I can cook it just for a bit, just to get some color to it, now add onions, cook for a minute then add cilantro and jalapeños cook until tender and onion is translucent, then add tomato and salt and pepper to taste.
Serve on a corn or flour tortilla, or as a side for your Sunnyside eggs.
