Homemade Big Chicken Nuggets
3 boneless skinless chicken breasts
1 tsp. (heaping) of onion powder
4 tsp. (heaping) of Lemon pepper
2 TBSP. (heaping) Uncle Chris Steak Seasoning + 2 tsp.
2 cups of Panko Bread Crumbs
3 eggs, beaten
2 cups of flour
2 cups buttermilk
Boil your chicken breast until it is cooked all the way through, pull out and cut into the desired size for your nugget Transfer chicken to a bowl add buttermilk and 2 tsp. Lemon pepper & 2 tsp. Uncle Chris Steak Seasoning mix and let it rest for 20 minutes. Meanwhile, Heat oil in a deep fryer to 350 degrees, Combine all the dry ingredients in a small bowl mix well except for the flour and the panko. Whisk eggs together in a bowl set aside. In another wide bowl combine the flour and half of the spices mix well. In another wide bowl combine Panko and the rest of the spices mix well. Pull chicken out a nugget at a time and Coat with the flour mixture then dip it in the egg, then dip into the panko and place slowly into the hot oil cook until golden brown. Remove to a paper towel-lined plate (to catch any excess oil). Enjoy I served mine with Spicy Mexican Corn, and mashed potatoes, and Country Gravy.
