Country Gravy
you will need:
1/2 c. butter or oil butter taste better...
1/2 c. + 3 tbsp. all-purpose flour
1/2 tsp black pepper
2 c. Of chicken broth
2 c. heavy cream
salt to taste to your liking
Heat your butter over medium to medium-low heat until melted. Sprinkle the flour over the butter stir until you start to see a very light brown color you will almost immediately have a very thick paste in your pan.
Continue stirring it slowly with the whisk for 30 seconds to a minute, keep stirring while you add about ½ c of heavy cream, then the chicken stock when adding the chicken stock check for thickness you don't want the gravy too watery or too thick. It will be like really thick, sludgy gravy now.
Make sure you whisk it fast enough to break up any lumps. Add your salt and pepper to taste, If it gets too thick on you, just add a tablespoon or two of milk at a time until it thins out again) If it’s too thin add a little cornstarch and whisk.
