Homemade Burger Buns made in bread machine or by hand



1 cup warm water
3 tablespoons warm milk
2½ tablespoons sugar
1½ teaspoons salt
2½ tablespoons butter (softened)
3 ⅓ cup all-purpose flour
2 large (eggs beat)

2 teaspoons active dry yeast

In your bread machine combine all the ingredients in the way it is listed water,  milk, sugar, salt, butter give it a quick mix, now add flour, once you add the flour with a rubber spatula move the flour to the side just a bit to add the eggs, now in the center of the flour make a small well and add the yeast. Close bread machine lid and set it to the dough cycle and let the machine do its job. Now your dough  has risen in the bread machine flour your dry clean counter sprinkle with a little flour add more if needed punch dough in the bread basket and pull out off basket sett on your floured counter knead for 2 to 3  minutes this recipe makes anywhere from 12 to 16 buns depending how big you want your hamburger buns, Line a baking sheet with parchment paper. Using dough scraper or sharp knife, divide dough into 12 equal parts. Gently roll each into a ball and place on cookie sheet half an inches apart on the lined baking sheet. Cover loosely with a piece of plastic wrap lightly coated in nonstick spray and let buns rise, repeat until all dough is shaped, place in the oven make sure oven is not on I boil a small pot of water and place it in the oven with the buns to help it rice faster check after 45 minutes most of the time it should double in size by now if not leave in there for an other 15 minutes. once the buns have risen pull out and leave the pot of water in there preheat oven to 350* for 10 minutes while oven is preheating gently lift the plastic wrap off of the buns and discard, brush the risen buns with milk be gentle you do not want to deflate the dough. Place buns in oven and bake for about 14 minutes give or take each oven is different in temperatures so at 7 minutes rotate buns. Once they are golden brown pull out and brush with butter and cover with a clean kitchen towel for 5 minutes just let them rest for a bit, now you can slice them and enjoy with your hamburgers.

In a measuring cup, combine one cup warm water, the milk, yeast and sugar. Let stand until foamy, about five minutes. In the mean time, beat one egg. In a large bowl, combine flour and salt, add the butter to the flours and salt and mix into the flour using your fingers or 2 forks, making crumbs, like making biscuits. Stir in the yeast mixture and beaten egg until it forms a dough. Scrape dough onto clean, well-floured counter, knead, scooping the dough up, and turning it, until smooth and elastic, about 8 to 10 minutes. You want the dough to remain slightly sticky, as the more flour you add, the tougher they will be when baked. Shape dough into a ball and return it to bowl spray with a non stick spray or lightly rub with a bit of oil, cover bowl with plastic wrap and place in the oven make sure oven is not on I boil a small pot of water and place it in the oven with the buns to help it rice faster check after 45 minutes most of the time it should double in size by now if not leave in there for an other 15 minutes let it rise until doubled in size,   Line a baking sheet with parchment paper. Polvorones (Mexican Cinnamon Cookies)

Polvorones (Mexican Cinnamon Cookies) 2 cups flour 1/2 cup sugar 1 tsp. baking powder pinch of salt 1/2 cup lard (room temp) 1/2 cup butter (room Temp) 1/2 tsp. vanilla extract 1/2 tsp. almond extract Let's get started In a dry bowl add flour, salt, and baking powder, set aside. 4 medium potatoes, rinse and diced ¼ cup oil 1 small onion 1medium tomatoes, rinse and diced 1 jalapeño, rinse and diced 1/4 cup cilantro, chopped Salt to taste In a pot add oil, let it heat up, then add potatoes, cook and let it toast a bit while it's toasting cover with lid to let it steam and softened, do this until it's all toasty lite brown, and cooked all the way through, now add onions, cilantro and jalapeños cook until translucent, then add tomato and salt.  Serve on a corn or flour tortilla.
