Creamy Rosemary Orzo with Cheese
3 tbsp. Butter
1 tbsp. Oil
1-½ c. Orzo
3 c. beef Stock
1 c. heavy cream
1 sprig of rosemary choped
2 cloves of garlic minced
1/2 an onion diced
1 c. Monterey Cheese
In a pan over medium heat add oil and melt the butter, add the orzo and saute for 3 minutes, or until the orzo starts to get golden brown, add onion, garlic, and rosemary stir and cook until onion is translucent, now add broth and cover and simmer for 10 minutes stir cover cook for another 10 minutes, cook until all the broth has been absorbed. Remove from the heat, add the cheese and add salt and pepper to taste.
