one pot meal cheesy chicken broccoli
3 tbsp. oil
½medium yellow onion, diced
10 small boneless skinless chicken thighs
3 cloves of garlic minced
2 cup uncooked Jasmine rice
2½ cups broccoli florets, cut into bite-sized pieces
1 large carrot shredded
1/32 oz. cups of chicken broth
2 cups shredded cheddar cheese
2 tsp. Pepper
3 tbsp. butter
In a large pot on medium heat add oil, onions, and carrots saute for 2 minutes add garlic, mix well then add chicken mix and cook for about 5 minutes mixing in between, after the five minutes add rice and broth increase the heat to high bringing it to a boil, once it starts to boil reduce heat to a medium high add broccoli and cook until chicken is cooked through and rice is tender, cover pot with a lid. Once cooked turn heat off and add butter, pepper and cheese mix well until cheese melts, sprinkle with the green part of the green onions.
