Spicy Red Beans & Wild Rice
1 lb. dry red beans cleaned
1 large onion, chopped
1 green bell pepper, chopped
1 tbsp. garlic powder
1 tsp. Knorr pollo
A few dashes of Tabasco
1/2 tsp. Gumbo File
3 tsp. Slap your Mama Cajun seasoning
1/2 tsp. Cheyenne pepper
4 sticks celery, chopped
2/48 oz. Low sodium chicken broth
3 bay leaves
12 oz. Smoked Turkey wing sliced and chopped
12 oz. andouille sausage, sliced
4 cups water
2 c. Wild rice (cooked)
Rinse beans, and then soak in a large pot of chicken broth for 30 minutes, then cook for 90 minutes
Meanwhile in a pan, heat oil over medium heat, cook sausage, once the sausage is cooked add the turkey, onion, bell pepper, and celery cook until onion is translucent.
Once the beans have cooked for 90 minutes then add the cooked turkey with the veggies and at this time add the rest of the ingredients, reduce heat to medium-low. Simmer for 1 hour.
If the broth is too watery add a bit of cornstarch to thicken it up.
Meanwhile, prepare the rice. I used 90 second Uncle Ben's wild rice.
In a bowl add rice and top with the spicy beans.
