CAPIROTADA (MEXICAN BREAD PUDDING)
After doing a lot of research, I found out that there are so many ways to make Capirotada, some add coconut, others add pecans or peanuts, and some add bananas.
As for me I cook it plain and simple, but oh so tasty.
Capirotada is a must have every year during Easter, but I can eat it all year round.
This dish is a reminder of the suffering of Christ on the cross.
The ingredients in this recipe carry a symbolic representation.
The bread is for the Body of Christ, the syrup is his blood, the cloves are the nails on the cross, the cinnamon sticks symbolize the wooden cross, and the melted cheese stands for the Holy Shroud.
Shroud is a length of linen cloth-bearing the image of a man (Jesus) who is alleged to be Jesus of Nazareth... Pope John Paul II called the Shroud a mirror of the Gospel.
Ok ok, let get this baby going.
Gather all of your ingredients
1 1/2 loaf of bread (28 slices)
5 cups water
2 piloncillo
6 cinnamon sticks
2 anise stars
6 whole cloves
16 oz. Block Cheddar Cheese shredded
2 cup raisins plus more optional I used 20 oz.
1 coffee filter
1 twisty tie
Now let's get started
Preheat oven to 350°
In a coffee filter place cloves, and anise, twist and tie.
Place sliced bread on a baking sheet and bake for 3 minutes on each side, or until lightly toasted and dry, remove and set aside.
Now combine water, piloncillo, cinnamon sticks, two cups of raisins, and the coffee filter filled with anise, cloves into a large pot, bring to a boil then reduce heat, simmer for about 15 minutes, remove from heat and let it cool.
Once cool enough to handle, make sure to pull out all of the cinnamon sticks and cloves, anise, save the raisins and syrup and set them aside.
Mmmm my kitchen smells delicious!!! 😋😋😋
Ok back to the Capirotada.
Get a baking dish I used a cake pan, a 9 x 14 spray with non-stick baking spray.
Layer ingredients in the following order.
Place toasted bread at the bottom of the baking dish (fill in every corner if possible), then sprinkle a third of the cheese, followed by a third of the raisins, but I also sprinkled more raisins that we're not boiled, and lastly drizzle 1 cup of syrup evenly over all layer's of goodness, repeat this in the same order until all of baking dish is full to the rim.
Before baking let rest for about 10 minutes or more, just until it soaks in all the wonderful delicious syrup.
Spray a piece of foil with non-stick spray cover the baking dish with aluminum foil, then bake for 30 minutes covered, then uncover and bake for about 10 minutes or less to a beautiful golden brown.
Serve warm
