Instant Pot Pork Tenderloin




  • Instant Pot Pork Tenderloin


Gather all of your ingredients

2 1/2 lbs. pork tenderloin, cut in half length wise.

2 tbsp. Oil

3 oz. apple juice

2 sprigs of Rosemary

1/2 onion diced

Garlic salt

Italian spice

Worcestershire sauce

Dijon mustard

Let get this baby started

Turn your stove on to a medium high, add your oil,e season pork with garlic salt and Italian seasoning.

Place pork in your hot pan and sear all sides until you get a golden brown. 

Once the pork has been seared, pull out of pan and drizzle with Worcestershire sauce, then smear Dijon all over, and sprinkle with spices again.

Be careful not to burn yourself.

In the bottom of your instant pot add your apple juice, then place your seared spiced pork, and top with two sprigs of Rosemary.

Close the lid, select meat/stew, then press the + sign keep pressing it until you've reached 45 minutes, the instant pot needs to build up pressure and heat up, so after the pressure cooker reaches full pressure, it will start the count down from 45 down.

After the cooking time is complete, press "Cancel" and carefully release the pressure.

( DO NOT PUT YOUR FACE IN FRONT OF STEAM RELEASE VALVE, JUST FLIP FROM THE SIDE, DO NOT PUT HAND OVER IT!!!)

Remove pork Tenderloin from the Instant Pot (keep the juices the Instant Pot), cover and allow to rest.

In the pan you seared the pork tenderloin add onions and cook until translucent.

Add to instant pot mix together, in a small bowl add one tablespoon cornstarch and two tablespoons water mix well and add it to the Instant Pot with the juices.

Turn Instant Pot on "Sauté” and simmer until thickened, add a little more water if need to thin out gravy.

Taste seasoning and add additional salt and pepper if desired.

I served my Pork Tenderloin on a bed of mixed vegetables and couscous.

Polvorones (Mexican Cinnamon Cookies)

Polvorones (Mexican Cinnamon Cookies) 2 cups flour 1/2 cup sugar 1 tsp. baking powder pinch of salt 1/2 cup lard (room temp) 1/2 cup butter (room Temp) 1/2 tsp. vanilla extract 1/2 tsp. almond extract Let's get started In a dry bowl add flour, salt, and baking powder, set aside. Line 2 cookie sheets with parchment paper set aside. Get you standup mixer, to your mixer bowl add butter and lard cream until they are well combined, now add the sugar and extracts, mix well, will look a little broken that's fine. Now add flour mixture and mix for 2 minutes, pour dough mixture onto a dry counter, using your hands work and gather the dough to form a ball, cut in half and refrigerate for at least an hour. Only pull the dough you are going to use leave the rest in the refrigerator. 4 medium potatoes, rinse and diced ¼ cup oil 1 small onion 1medium tomatoes, rinse and diced 1 jalapeño, rinse and diced 1/4 cup cilantro, chopped Salt to taste In a pot add oil, let it heat up, then add potatoes, cook and let it toast a bit while it's toasting cover with lid to let it steam and softened, do this until it's all toasty lite brown, and cooked all the way through, now add onions, cilantro and jalapeños cook until translucent, then add tomato and salt.  Serve on a corn or flour tortilla.
