Gather your ingredients
3/4 c. Almond flour
4 oz Cream Cheese (softened, room temperature)
3 Eggs
1 tbsp. Vanilla
1 Tsp. Baking Powder
2 Tsp. Splenda
Let's get started
In a large mixing bowl add Cream Cheese, Vanilla, and eggs, mix well with your hand mixer.
Now that the wet ingredients are well-blended add in your dry ingredients and continue to mix.
Scrape sides of bowl making sure all ingredients are incorporated.
Heat up a griddle on high of 400°, I coated the bottom of the griddle with coconut oil, it gets a little smokie.
Once the oil has been melted use a paper towel be careful don't burn yourself, but wipe up any extra oil, using the same paper towel in between batches of pancakes rub the griddle.
Now I used a 1/3 cup to pour pancake batter on to the griddle, pour batter to the hot griddle, using the cup you just had with batter, gently make circular motion while pour batter out and work your way outwards to create the size pancakes that you like.
Cook for about 2 minutes on each side, or until golden brown.
Mmmm now the best part, smother them with butter and top with your favorite toppings.
