Instant Pot Mexican Beans

1 lb. Fresh Pinto Beans 1 links andouille sausage
1/2 package of bacon sliced into about 1-inch cut
5 oz. of thick sliced ham cut into about 1-inch cut 1/2 small onion, diced 1 tbsp. Knorr pollo 1 tbsp. Garlic powder 1 tbsp. Cumin powder
water


Clean your beans, take out any ugly and or broken beans out, make sure you also take out any little clumps of dirt, wash under your tap water rubbing the beans in between your hands to make sure you take off any dirt that is on the beans.  

Now add beans to a large bowl and cover with water, at least 4 times as much water as beans because the beans will expand, soak beans in water overnight. 


 The next morning, drain and rinse. 

Get your instant pot out

Ok set you instant pot to the sauteed button and saute your sausage, ham, and bacon for about 3 minutes then add the onion and cook until the onion is translucent, now do not drain the fat from the pot just add beans and the rest of the spices to the instant pot mix and cover with fresh water to about 2 inches above the beans or a bit more if you want them juicy but do not exceed the water past the line of the pot were it tells you do not pass this line.

Put on the lid and turn the knob to the sealing position.

Press manual (or pressure cook on newer models) and adjust the timing if needed.

Cooking the beans from 30 minutes to 1 hour, it all depends on how fresh the beans are and if you soaked the beans overnight will determine how long the beans will cook.

Once the instant pot lets you know it's all done, be careful don't burn yourself, releasing the steam valve, do not put face or hands in the way of the steam... Read your instant pot manual for instructions on how to use your instant pot.

Check the beans at 30 minutes to see if the beans are soft enough if they still have a bite to it close lid again and make sure to close the valve and set it for another 15 minutes, check for doneness again after the 15 minutes, if for some reason it's still not done close the lid one more time for another 15 minutes, by this time it should be done. 

Let pressure release naturally until full pressure has released. This means, do not touch the valve once the instant pot beeps. Simply wait for the safety red pin to drop on its own, leave it alone.

Polvorones (Mexican Cinnamon Cookies)

Polvorones (Mexican Cinnamon Cookies) 2 cups flour 1/2 cup sugar 1 tsp. baking powder pinch of salt 1/2 cup lard (room temp) 1/2 cup butter (room Temp) 1/2 tsp. vanilla extract 1/2 tsp. almond extract Let's get started In a dry bowl add flour, salt, and baking powder, set aside. Line 2 cookie sheets with parchment paper set aside. Get you standup mixer, to your mixer bowl add butter and lard cream until they are well combined, now add the sugar and extracts, mix well, will look a little broken that's fine. Now add flour mixture and mix for 2 minutes, pour dough mixture onto a dry counter, using your hands work and gather the dough to form a ball, cut in half and refrigerate for at least an hour. Only pull the dough you are going to use leave the rest in the refrigerator. 4 medium potatoes, rinse and diced ¼ cup oil 1 small onion 1medium tomatoes, rinse and diced 1 jalapeño, rinse and diced 1/4 cup cilantro, chopped Salt to taste In a pot add oil, let it heat up, then add potatoes, cook and let it toast a bit while it's toasting cover with lid to let it steam and softened, do this until it's all toasty lite brown, and cooked all the way through, now add onions, cilantro and jalapeños cook until translucent, then add tomato and salt.  Serve on a corn or flour tortilla.
