Gingerbread Cookies






Gingerbread Cookies



1 1/3 cup oil
1/2 cup molasses`
2 cup brown sugar
4 eggs
1 tsp. vanilla
6 cups all-purpose flour and a bit more if needed
1 tbsp. plus 1 Tsp. ground cinnamon
1 tbsp. plus 1 Tsp.  ground ginger
2 tsp. ground cloves
2 tsp. baking soda
1 tsp. salt

If you are not making to many cookies cut this recipe in half, depending on the size of cookie cutters will determine how many cookies you will get out of the dough.

Preheat oven to 350*, Get your cookie sheets and line with parchment paper and set aside.

Whisk together the dry ingredients (not the brown sugar) and set aside.

Using your standup mixer add the wet ingredients and the brown sugar, but add one egg at a time mix well, then slowly add in the flour mixture a little at a time until all is well combined

The dough will still be sticky.

Dump the dough out onto a heavily floured surface and with floured hands using the sides of your hands (palm of hands), (do not dig your fingers into the dough), work in more flour with your hands until the dough is no longer sticky not too much flour, just a little the best thing to do afterward is cut the dough into four sections and shape into disk shape wrap the dough in plastic wrap and refrigerate for at least 3 hours, pulling out only what you will be working with at the time keep the rest refrigerated until ready to use. 

I leave mine in the refrigerator overnight, or I make it in the morning and then by noon I am baking the gingerbread men.

On a lightly floured surface, roll out dough about a 1/4 inch thick and using your favorite cookie cutter cut out desired shape, place on prepared cookie sheet.

Bake for 8 minutes until (cracked) cookie will have lite little cracks. no more than 10 minutes, if you cook them any longer once the cookies cool they will be hard. So 8 minutes is what I always bake mine.

Let cool for 2 minutes before moving to a cooling rack.

Eat them as is or decorate them with a glaze

Polvorones (Mexican Cinnamon Cookies)

Polvorones (Mexican Cinnamon Cookies) 2 cups flour 1/2 cup sugar 1 tsp. baking powder pinch of salt 1/2 cup lard (room temp) 1/2 cup butter (room Temp) 1/2 tsp. vanilla extract 1/2 tsp. almond extract Let's get started In a dry bowl add flour, salt, and baking powder, set aside. Line 2 cookie sheets with parchment paper set aside. Get you standup mixer, to your mixer bowl add butter and lard cream until they are well combined, now add the sugar and extracts, mix well, will look a little broken that's fine. Now add flour mixture and mix for 2 minutes, pour dough mixture onto a dry counter, using your hands work and gather the dough to form a ball, cut in half and refrigerate for at least an hour. Only pull the dough you are going to use leave the rest in the refrigerator. 4 medium potatoes, rinse and diced ¼ cup oil 1 small onion 1medium tomatoes, rinse and diced 1 jalapeño, rinse and diced 1/4 cup cilantro, chopped Salt to taste In a pot add oil, let it heat up, then add potatoes, cook and let it toast a bit while it's toasting cover with lid to let it steam and softened, do this until it's all toasty lite brown, and cooked all the way through, now add onions, cilantro and jalapeños cook until translucent, then add tomato and salt.  Serve on a corn or flour tortilla.
