Rainbow Pancakes & Rainbow Eggs




Rainbow Pancakes & Rainbow Eggs

2 c all-purpose flour
4 tsp.  Baking powder
1/4 tsp. salt
1/4 cup  Sugar
1 1/4 cups milk or buttermilk or heavy cream
2 egg
2 tsp. vanilla 
1 tsp. oil
5 different colors of food gel
5 disposable cups
Use a griddle that is non-stick.

Directions
In a large bowl, add the flour, baking powder, salt, and sugar mix with a Wisk or hand mixer, then add milk, oil, vanilla, and egg mix until smooth.
Divide batter equally into the 5 cups and add a few drops of food coloring gel, mix well and add more color if needed until you get the desired color. 
Heat a lightly oiled griddle or frying pan over medium-high heat. 
Pour the batter onto the griddle, brown on one side of the pancake, on the top side you will start to see bubbles forming that means pancake is ready to flip over but if you want to keep the color bright then leave it until it dries completely, flip to the other side and let it brown just for a few seconds, pull out and butter right away, lightly oil the pan again using a paper towel be careful you don't burn yourself, and repeat.
Serve hot smother with more butter if you like lots of butter and syrup or any topping of your choice...
For the eggs add an egg to each cup and add a few drops of food coloring gel, mix well.
Once you have cooked the pancakes you can add a bit of oil to the griddle and cook one color egg at a time until your egg is fully cooked.
Serve with your pancakes hot

Polvorones (Mexican Cinnamon Cookies)

Polvorones (Mexican Cinnamon Cookies) 2 cups flour 1/2 cup sugar 1 tsp. baking powder pinch of salt 1/2 cup lard (room temp) 1/2 cup butter (room Temp) 1/2 tsp. vanilla extract 1/2 tsp. almond extract Let's get started In a dry bowl add flour, salt, and baking powder, set aside. Line 2 cookie sheets with parchment paper set aside. Get you standup mixer, to your mixer bowl add butter and lard cream until they are well combined, now add the sugar and extracts, mix well, will look a little broken that's fine. Now add flour mixture and mix for 2 minutes, pour dough mixture onto a dry counter, using your hands work and gather the dough to form a ball, cut in half and refrigerate for at least an hour. Only pull the dough you are going to use leave the rest in the refrigerator. 4 medium potatoes, rinse and diced ¼ cup oil 1 small onion 1medium tomatoes, rinse and diced 1 jalapeño, rinse and diced 1/4 cup cilantro, chopped Salt to taste In a pot add oil, let it heat up, then add potatoes, cook and let it toast a bit while it's toasting cover with lid to let it steam and softened, do this until it's all toasty lite brown, and cooked all the way through, now add onions, cilantro and jalapeños cook until translucent, then add tomato and salt.  Serve on a corn or flour tortilla.
