Homemade Orange Chicken


Orange Chicken 

Gather your ingredients

Oil for frying
3 large Chicken breast cut into cubes
2 tbsp. Cornstarch
4 Egg whites
1/ tsp. Black pepper
Dash of sesame oil

Cornstarch slurry

1 tsp. Cornstarch
1/4 c. Water

Mix together set aside but right before using give it a good mix again.

Orange Sauce

1/2 Orange zest
1 c. Fresh squeezed orange juice
1/8 c. Sugar plus a sprinkle more
1/4 c. Rice vinegar
2 tbsp. Soy sauce
1/2 tsp. Ground ginger
1/4 tsp. Minced garlic
1/2 tsp. Fresh ground ginger
Sprinkle of pepper flakes

Let's get started

CHINESE ORANGE

 Start with boneless skinless chicken breast  cut into bite-size pieces.

Whisk egg whites, flour, and cornstarch once you whisk it to where it's a little foamy and cornstarch is dissolved add the cut up chicken into the whisked eggs and cornstarch/flour mixture mix around with your hand or spoon making sure the chicken gets all coated.

Now it's time to make the orange sauce, place orange juice, sugar, vinegar, soy sauce, garlic, ginger, and red chili flakes in a small pot and cook over medium-high heat, add cornstarch and water slurry and cook until thickened, turn of heat and stir in orange zest, set aside.

Heat oil in a pot over medium-high heat, once the oil is ready, in batches, cook chicken for about 2 minutes until light golden brown, repeat with remaining chicken.

Remove from oil and drain on a paper towel-lined plate.

Toss fried chicken with the sweet orange sauce and top with green onions.

Polvorones (Mexican Cinnamon Cookies) 2 cups flour 1/2 cup sugar 1 tsp. baking powder pinch of salt 1/2 cup lard (room temp) 1/2 cup butter (room Temp) 1/2 tsp. vanilla extract 1/2 tsp. almond extract Let's get started In a dry bowl add flour, salt, and baking powder, set aside. Line 2 cookie sheets with parchment paper set aside. Get you standup mixer, to your mixer bowl add butter and lard cream until they are well combined, now add the sugar and extracts, mix well, will look a little broken that's fine. Now add flour mixture and mix for 2 minutes, pour dough mixture onto a dry counter, using your hands work and gather the dough to form a ball, cut in half and refrigerate for at least an hour. Only pull the dough you are going to use leave the rest in the refrigerator. 4 medium potatoes, rinse and diced ¼ cup oil 1 small onion 1medium tomatoes, rinse and diced 1 jalapeño, rinse and diced 1/4 cup cilantro, chopped Salt to taste In a pot add oil, let it heat up, then add potatoes, cook and let it toast a bit while it's toasting cover with lid to let it steam and softened, do this until it's all toasty lite brown, and cooked all the way through, now add onions, cilantro and jalapeños cook until translucent, then add tomato and salt.  Serve on a corn or flour tortilla.
