Homemade Pinto Beans...

Gather your ingredients

1 lbs. beans
8 c. water or more as needed
2 TBSP. Cumin
2 TBSP Garlic
2 TBSP. Knorr Pollo Powder
1 can of tomato sauce
1/2 onion diced
1/2 link andouille sausage

Let's get started

Clean and get rid of dirt rocks and broken beans first, then rinse the beans really good.

Place the pinto beans in a large pot add water and let them soak overnight they will expand (but you can cook them right away if you like), rinse one more time and discard the water, now place the clean beans in your pot with water add all the ingredients from above and bring to a boil, reduce heat to medium-high, and continue cooking stirring occasionally, until beans are tender add water as needed to keep the beans moist I used a total of 12 cups of water but I like my beans juicy.

This is one way of making beans.

Following the same process as above but before add the Chipotle and bacon... to give it a different flavor...add bacon strips from the beginning of the cooking, I've even added sausage, chicharrones/pork skins the plain ones, Want to make them Charro Beans add Pico de Gallo to it at the end when they are done cooking or my favorite Borracho Beans in a medium pan add 1 tsp. oil add Pico de Gallo to the oil, sauté about 2 minutes add 1/12oz can of your favorite beer cook for a minute then add it to your cooked beans.

Cooking time 45 minutes (soaked overnight) or up to 2 hours depending if the beans are fresh or old mine where fresh the older the bean the longer they take to cook.

Cook until tender.

Polvorones (Mexican Cinnamon Cookies)

Polvorones (Mexican Cinnamon Cookies) 2 cups flour 1/2 cup sugar 1 tsp. baking powder pinch of salt 1/2 cup lard (room temp) 1/2 cup butter (room Temp) 1/2 tsp. vanilla extract 1/2 tsp. almond extract Let's get started In a dry bowl add flour, salt, and baking powder, set aside. Line 2 cookie sheets with parchment paper set aside. Get you standup mixer, to your mixer bowl add butter and lard cream until they are well combined, now add the sugar and extracts, mix well, will look a little broken that's fine. Now add flour mixture and mix for 2 minutes, pour dough mixture onto a dry counter, using your hands work and gather the dough to form a ball, cut in half and refrigerate for at least an hour. Only pull the dough you are going to use leave the rest in the refrigerator. 4 medium potatoes, rinse and diced ¼ cup oil 1 small onion 1medium tomatoes, rinse and diced 1 jalapeño, rinse and diced 1/4 cup cilantro, chopped Salt to taste In a pot add oil, let it heat up, then add potatoes, cook and let it toast a bit while it's toasting cover with lid to let it steam and softened, do this until it's all toasty lite brown, and cooked all the way through, now add onions, cilantro and jalapeños cook until translucent, then add tomato and salt.  Serve on a corn or flour tortilla.
