Capirotada (Mexican Bread Pudding)



CAPIROTADA (MEXICAN BREAD PUDDING)

After doing a lot of research, I found out that there are so many ways to make Capirotada, some add coconut, others add pecans or peanuts, and some add bananas.

As for me I cook it plain and simple, but oh so tasty.

Capirotada is a must have every year during Easter, but I can eat it all year round.

This dish is a reminder of the suffering of Christ on the cross.

The ingredients in this recipe carry a symbolic representation.

The bread is for the Body of Christ, the syrup is his blood, the cloves are the nails on the cross, the cinnamon sticks symbolize the wooden cross, and the melted cheese stands for the Holy Shroud.

Shroud is a length of linen cloth-bearing the image of a man (Jesus) who is alleged to be Jesus of Nazareth... Pope John Paul II called the Shroud a mirror of the Gospel.

Ok ok, let get this baby going.

Gather all of your ingredients

1 1/2 loaf of french bread (28 slices) or any sliced bread
7 cups water
2 piloncillo (Brown Sugar Cane)
4 canela de palo (cinnamon sticks)
1 anise stars
3 clavos (whole cloves)
16 oz. Queso (Block Cheddar Cheese) shredded more if you like
2 c. pasas (raisins) plus more optional I used 20 oz.
1 mantequilla (stick of butter)
1 coffee filter
1 twisty tie

Now let's get started

Preheat oven to 400°

In the coffee filter place cloves, and anise, twist and tie set in pot.

Butter one side of the bread and place sliced bread butter down on a baking sheet and bake for 3 minutes on each side, or until lightly toasted and dry, remove and set aside.

In a large pot combine water, piloncillo, cinnamon sticks, two cups of raisins, and the coffee filter filled with anise, and cloves, bring to a boil then reduce heat, simmer for about 15 minutes or until the pilloncio melts, remove from heat set aside.

Be careful not to burn yourself scoop out all of the cinnamon sticks and cloves, anise, save the raisins and syrup and set them aside.

Mmmm my kitchen smells delicious!!! 😋😋😋

Ok back to the Capirotada.

Get a baking dish I used a cake pan, a 9 x 14 spray with non-stick baking spray.

Layer ingredients in the following order.

Place one layer of oven toasted bread at the bottom of the baking dish (fill in every corner if possible), then sprinkle a third of the cheese, followed by a third of the raisins, but I also sprinkled more raisins that we're not boiled, and lastly drizzle 1 cup of syrup evenly over all layer's of goodness, repeat this in the same order until all of baking dish is full to the rim do not leave any white spots on the bread cover with the syrup, you may not use all the syrup.

Spray a piece of foil with non-stick spray cover the baking dish with aluminum foil, then bake for 20 minutes covered.

Serve warm or cold

Polvorones (Mexican Cinnamon Cookies)

Polvorones (Mexican Cinnamon Cookies) 2 cups flour 1/2 cup sugar 1 tsp. baking powder pinch of salt 1/2 cup lard (room temp) 1/2 cup butter (room Temp) 1/2 tsp. vanilla extract 1/2 tsp. almond extract Let's get started In a dry bowl add flour, salt, and baking powder, set aside. Get you standup mixer, to your mixer bowl add butter and lard cream until they are well combined, now add the sugar and extracts, mix well, will look a little broken that's fine. Now add flour mixture and mix for 2 minutes, pour dough mixture onto a dry counter, using your hands work and gather the dough to form a ball, cut in half and refrigerate for at least an hour. 4 medium potatoes, rinse and diced ¼ cup oil 1 small onion 1medium tomatoes, rinse and diced 1 jalapeño, rinse and diced 1/4 cup cilantro, chopped Salt to taste In a pot add oil, let it heat up, then add potatoes, cook and let it toast a bit while it's toasting cover with lid to let it steam and softened, do this until it's all toasty lite brown, and cooked all the way through, now add onions, cilantro and jalapeños cook until translucent, then add tomato and salt.  Serve on a corn or flour tortilla.
