Homemade Flour Tortillas




Homemade Flour Tortillas

Gather your Ingredients

4 cups flour, plus extra to dust tortilla dough

2 teaspoon salt

1/2 Cup shortening

1 cup hot water more is needed

Let's get started

Add flour, salt into a large bowl mix well, add the shortening mix until crumble, add hot water (don't burn yourself) mix well until dough forms into a ball.






Place the dough in a lightly floured surface and knead for 3 minutes or until dough is smooth, add a little more flour if it is too sticky.







Cover and let it rest for 30 to 60 minutes.



After the dough has rested knead for about 2 minutes then divide the dough into small balls, amount of dough balls you get depending on how big you make the dough ball.






Shape the dough ball into a small thick Frisbee like pancake shape.



Heat skillet or a large pan over medium-high heat.

Working on one dough ball at a time, roll out each dough piece on a lightly floured surface.






Dust dough ball with flour if necessary in between rolling the dough ball out.

Try to get them nice and thin, with each roll out rotate the dough until you have it rolled out.

Place it onto the skillet or hot pan and cook for 30 seconds or until a few golden brown spots appear on the underside.

Some bubbles will also start to form on top.



Flip the tortilla over and cook for another 45 seconds.

 If the tortillas are browning too fast, turn the heat down a little.

Flip one more time if needed to finish cooking.

Remove the tortilla from the skillet/pan and place in clean kitchen towel, or you can use foil to store them too, if placing in foil or a container let them cool if not they will sweat.

Repeat the steps with the remaining dough

Polvorones (Mexican Cinnamon Cookies)

Polvorones (Mexican Cinnamon Cookies) 2 cups flour 1/2 cup sugar 1 tsp. baking powder pinch of salt 1/2 cup lard (room temp) 1/2 cup butter (room Temp) 1/2 tsp. vanilla extract 1/2 tsp. almond extract Let's get started In a dry bowl add flour, salt, and baking powder, set aside. Line 2 cookie sheets with parchment paper set aside. Get you standup mixer, to your mixer bowl add butter and lard cream until they are well combined, now add the sugar and extracts, mix well, will look a little broken that's fine. Now add flour mixture and mix for 2 minutes, pour dough mixture onto a dry counter, using your hands work and gather the dough to form a ball, cut in half and refrigerate for at least an hour. Only pull the dough you are going to use leave the rest in the refrigerator. 4 medium potatoes, rinse and diced ¼ cup oil 1 small onion 1medium tomatoes, rinse and diced 1 jalapeño, rinse and diced 1/4 cup cilantro, chopped Salt to taste In a pot add oil, let it heat up, then add potatoes, cook and let it toast a bit while it's toasting cover with lid to let it steam and softened, do this until it's all toasty lite brown, and cooked all the way through, now add onions, cilantro and jalapeños cook until translucent, then add tomato and salt.  Serve on a corn or flour tortilla.
