Healthy Chicken Zoodle Soup 2 tablespoons oil 1 pound boneless, skinless chicken breasts, shredded or cut into bite size cubes. (optional you can use one solid color) but I like to use the rainbow. 1 small pack of baby carrots or sliced 3 stalks celery sliced 1 bushel of cilantro 4 cups chicken broth store bought or homemade 2 or 3 zucchini spiralized Heat oil in a large pot over medium heat. To the pot add all the vegetables, except zucchini noodles. Cook until onions are caramelized. Once the onions are cooked add Zoodles, cook for 3 minutes.
