Pumpkin Spice Latte

This recipe made a lot so use what you need and save the rest. Pumpkin Spice Latte 1/15oz. 100% Pure Pumpkin 5 tbsp. sugar 1c. Brown sugar 1 tsp. Cinnamon 1/4 tsp. nutmeg 1/4 tsp. Pumpkin Spice 1 c. Water 1 tsp. vanilla In a med pot on medium heat add all the ingredients above except vanilla simmer for 20 minutes, once it's done simmering turn heat off and add vanilla mix well. Warm up one cup of coffee and one cup of milk, mix and add a spoonful one at a time until you get the desired taste you like, top with a dollop whipped cream and sprinkle a tiny bit of cinnamon on top. Pumpkin Waffles

Pumpkin Waffles  2 cups flour 3 tsp. brown sugar 3 tsp. of baking powder 1 tsp. of baking soda 1 tsp. of cinnamon 1 tsp. pumpkin pie spice 1/2 tsp. salt 1 tsp. vanilla 1 1/2 c. of milk 1 c. of canned 100% pure pumpkin 1 egg yolk plus 3 egg whites 4 tbsp. melted butter 2 tbsp.apple cider vinegar In the bowl combine dry ingredients mix well and set aside. In another bowl combine wet ingredients but not the egg whites. Now in another bowl whip 3 egg whites until stiff peaks form set aside. Time to combine all three bowls first add pumpkin mixture to dry ingredients and mix well, now gently fold in stiff egg whites. Use batter immediately in the waffle maker. Cook according to your waffle maker instructions. Top with maple syrup or any topping you desire. Homemade Cabbage Rolls

Homemade Cabbage Rolls 1 Large Head of  kool Cabbage or any cabbage you can find 1 Onion, finely chopped 2 tbsp. Garlic powder 2 1/2 lbs. Ground Beef 1 c. Cooked Rice 1 Egg 1/2 c. Bread Crumbs 2 Tbsp. Worcestershire Sauce 1 tsp. Salt and Pepper or To taste 1 Tbsp. of Brown Sugar 1 Tbsp. Rice  Vinegar Marinara sauce recipe below, use all of the sauce from the recipe below...  Fill a large pot with water and bring to a boil drizzle some salt mix then slowly  drop the cabbage in and cook it for a few minutes or until the leaves become pliable. Allow to cool for a few minutes.  In a large bowl, combine the ground beef, onion, garlic, egg, rice, sugar, bread crumbs, rice vinegar, Worcestershire, salt, and pepper, mix well. Layer the bottom dish with leftover cabbage leaves then top with half of the marinara sauce in the bottom of a baking dish set aside. Moist Banana Bread

Just a little tip to save you time when you want something delicious for breakfast or with your coffee. Make the banana bread as instructed below, once its baked cool completely, then once it has cooled wrap each loaf 2 or 3 times with plastic wrap then pack them in a freezer Ziploc. When you're ready to use you can defrost in a microwave or leave on the counter until it defrosts completely and enjoy Moist Banana Bread  3 flour 1 tbsp.  Ground cinnamon 2 tsp.  Baking soda 2 c sugar 2 TBSP. Creamy Rosemary Orzo with cheese

Creamy Rosemary Orzo with Cheese  3 tbsp. Butter 1 tbsp. Oil 1-½ c. Orzo 3 c. beef Stock 1 c. heavy cream 1 sprig of rosemary choped 2 cloves of garlic minced 1/2 an onion diced 1 c. Monterey Cheese In a pan over medium heat add oil and melt the butter, add the orzo and saute for 3 minutes, or until the orzo starts to get golden brown, add onion, garlic, and rosemary stir and cook until onion is translucent,  now add broth and cover and simmer for 10 minutes stir cover cook for another 10 minutes, cook until all the broth has been absorbed. Remove from the heat, add the cheese and add salt and pepper to taste. BBQ Grilled Blackened Tilapia

BBQ Grilled Blackened Tilapia Blackened seasoning Lemon pepper 9 pieces of tilapia Spread your fish on wax paper and generously sprinkle each side of the fish with both spices from above, I used a grilling tray sprayed it with non-stick spray then placed the tilapia on it and then placed the tray on the bbq pit BBQing it for 3-4 minutes per side depending on how thick the fish is...serve with any sides you like, I served mine with an orzo rice and green beans. Homemade Chipotle Beans

Homemade Chipotle Beans 2 lbs. beans 10 c water + 2 more c. 1 TBSP. Cumin 1 TBSP Garlic 1 TBSP. Knorr Tomate Powder 1 TBSP. Knorr Pollo Powder ½ can of tomato sauce 4oz. 1/2 can Chipotle peppers in adobo sauce 1/2 onion diced 1 green bell pepper 1/2 a pack of bacon cut strips in small 1 inch cuts Clean and get rid of dirt rocks and broken beans first, then rinse the beans  really good. Place the pinto beans in a large pot add water and let them soak overnight they will expand (but you can cook them right away if you like), rinse one more time and discard the water, now place the clean beans in your pot with water add all the ingredients from above. Bring to a boil, reduce heat to medium-high, and continue cooking stirring occasionally, until beans are tender add water as needed to keep the beans moist I used a total of 12 cups of water but I like my beans juicy.  These are  one way of making the beans. Country Fried Pork Chops

Country Fried Pork Chops 8 Thin, pork chops 4 eggs 2 tablespoons Worcestershire sauce 1/5oz. Can of evaporated milk 2 cups flour 1 tsp. salt 2 tbsp. uncle Chris seasoning 1 tsp. garlic powder 1 tsp. pepper Oil for frying – about 3 cups In a pot heat oil over medium-high heat. Start mixing milk, eggs and Worcestershire sauce in a shallow bowl set aside, now prepare to bread In a large bowl mix all the dry ingredients. Dip pork chops in the flour first, then in the egg wash then back to the flour making sure to coat both sides, carefully and slowly place the battered chops in the hot oil and cook for 3 1/2 minutes, or until you can see the edges beginning to brown a pretty golden brown. Flip and cook for an additional 3 1/2 minutes. Once cooked remove from hot oil and place on a rack with paper towels, to help obsorb any excess oil. Mexican Chicken Stew

Mexican Chicken Stew (with a little kick to it) 3 breast of chicken boiled and diced or shredded  1 zucchini sliced the long ways in half then half again then slice in bit size chunks  2 Small Tomatoes diced into big chunks  (I used cherry tomatoes sliced in half) 1/15oz. can whole corn 1 small can tomato paste  1 Can of Tomato sauce  2 tbsp of Comino (Cumin) 1 tbsp of Chile powder 2 tbsp.  Garlic powder  2 tbsp. knorr pollo  1 tbsp. black pepper  1 hatch chile sliced in 4 1 green/red bell peppers diced 1/2 onion diced 2 cups frozen veggie mix Oil In a large pot put the chicken to boil until no longer pink, once it's done boiling pull out and cut into chunks or shred the chicken. Cheesy Corn Beef Goulash

Cheesy Corn Beef Goulash  3 lbs ground beef 2 tbsp. garlic powder 3 cups beef stock 1 (4 oz.) can tomato sauce 1 small can tomato Italian paste 2 TBSP Italian seasoning 3 bay leaves 2 TBSP. Knorr de res (Beef Bouillon) 2 cups pasta, uncooked, cook according to instructions  (I used Healthy Harvest 100% whole Grain Rotini) 1 cup shredded cheddar cheese 1/2 onion 2 cups of corn Add ground beef to a pot over medium-high heat  cook until no longer pink drain, add onion cook until translucent then add all the dry spices cook for about 3 minutes stirring constantly, add beef broth , tomato sauce and paste, stir well cook for 5 minutes stir cover and cook another 10 minutes,  take bay leaf out add cheese mix well cook for 3 minutes then add cooked pasta stir well, turn off heat, let it rest for 10 minutes. Flautas en tortillas rojas

Red Chicken Flautas 3 chicken breast boiled n shredded 1/4 cup onions, diced ... 2 teaspoons cumin powder 2 teaspoons garlic powder 1tbsp. Knorr Tomate 1 tbsp. Knorr Pollo 1teaspoon pepper 2 ounces of tomato sauce 24 to 30 red corn tortillas softened in oil 1. In a large pot, combine the shredded chicken along with onions saute until onion looks translucent, then add spices, stir well to combine, taste n add more spices if needed. Add the tomatoes sauce n a little of the water from where you boiled the chicken. Cook until the water evaporates. 2. Preheat 1 cups of oil to medium heat in a heavy, deep skillet or pan. 3. start filling and rolling. Add about 3 to 4 tablespoons of filling in each tortilla. Roll as tight as you can, place seam down. Roll all the tortillas first. 4. Cook the flautas for a minute or two on all sides or until golden and crispy. Serve with some fluffy rice and beans. Spicy Lemony Chicken

Spicy Lemony Chicken  5 boneless chicken breasts 2 sticks of butter 1 lemon squeezed juice only 1 tsp. garlic powder 1 tsp.  salt 2 tsp. Cheyenne pepper Lemon pepper for sprinkling Heat oven to 350 F. Coat a cookie sheet with non-stick spray In a pot, combine all the ingredients above but not the chicken, cook for a minute and dividing it into two save it for pouring over the chicken half way through baking. Dip the chicken breasts into the spicy butter one at a time place on the cookie sheet baked for 15 minutes then  pour the remainder of the spicy mixture over the top of the chicken then sprinkle with lemon pepper and place back into the oven and bake until fully cooked.
